Raw Spicy Beans

Invite friends over for a Festive Raw Night and serve these easy, Mexican-inspired Spicy Beans!
Full of warming spices and herbs – these Raw Beans are bursting with flavor and are sure to tickle your taste buds!
- 2 C. sunflower seeds (or 1 C. sunflower seeds with 1/2 C. Agar agar)
- ¼ C. sundried tomato (please soak for 1/2 hour, drain and save the soak water)
- ¼ cup sundried tomato soak water
- 1 medium chopped tomato
- ½ zucchini, chopped
- 1 Tbsp. chickpea miso
- 1 Tbsp. cumin
- 1 Tbsp. coriander
- 2 Tbsp. lemon juice
- ¼ tsp. chipotle
- 2 Tbsp. olive oil
- ½ tsp. Himalayan Salt
- 1 C. chopped cilantro
Blend in a food processor until smooth, fold in the cilantro. If you like you can keep it a little chunky for a bean like texture.
