Heavenly Garden Soup for the World- Phase 2

A garden vegetable soup for all seasons! Enjoy the gifts the earth brings in all of her abundance. Heavenly Garden Soup for the World reminds us of the bounty we have all around us and is a perfect soup to share with friends and family. Double the recipe and you REALLY have a soup for the World!

4 purple potatoes
1.5 sweet potatoes, chopped
1.5 yams, chopped
1 yellow Finn potato, chopped
4 carrots, chopped
2 stalks celery, chopped
1/4 purple cabbage, chopped
1/4 green cabbage, chopped
1/4 head cauliflower, chopped
1/4 bunch of cilantro, chopped
1/4 bunch spinach, chopped
1/4 lb shiitake mushrooms, chopped
1-2 cloves garlic, chopped
1-2 Tbsp. white chickpea miso
3/4 Tbsp. dill
1/2  tsp. basil
1/4 tsp ginger, grated
1 gallon filtered water

Heat water to 115 degrees F adding all ingredients, *except miso and cilantro. Heat 3-4 hours, adding cilantro during the last half hour. When soup is ready, remove 1 cup of broth, add miso to the cup, stir until dissolved and mix back into soup. Remove 2 cups of soup mixture (with vegetables) , blend in blender and stir back into soup. Serve and enjoy!
