Curried Carrot Avocado Soup- Phase 2

 An Autumn sunset in a bowl! This curried, gently spicy, creamy, soul-satisfying soup is a lovely way to unwind at the end of a long day. 


  • 3 C. Carrots, chopped
  • 2 C. water
  • 2 avocados
  • 1 clove garlic
  • 3 tsp. ginger juice
  • 1 tsp. lemon juice
  • 1 tsp.curry powder
  • 1/2 tsp. cumin
  • 1/2 Tbsp. Celtic salt
  • 1/4 tsp. cayenne
  • 1/4 tsp. fresh ground pepper


In a blender, process all ingredients until smooth and creamy and serve. (You can also chill in the fridge for an hour and serve)
