We love this black olive pate. It’s simply great as is and it also makes a solid ‘base’ if you want to do more with the seasonings or add other nuts and veggies. Black olives have a certain hearty, salty and satisfying texture that makes them uniquely delicious in pates. Diverse enough for a creamy side dish with your favorite chips and veggies or served as a dollop of flavor in a simple miso-based soup. The possibilities are as endless as this pate’s savory simplicity.
Black Olive Pate – Phase 1
2 C. pine nuts, (note: yellow seeds indicate that the seeds should not be sued)
3/4 C. black olives
3/4 C. filtered water
1 avocado
1 C. fresh parsley, finely chopped
1 C. tomatoes, diced
Process nuts, olives, avocado and water in a blender until creamy; combine mixture with parsley and tomatoes and mix well. If you desire salt or any other seasonings please add at this time to taste.
