Zen Gazpacho – Phase 1

5 Cups Vine-Ripened Tomatoes

¼ Cup Olive Oil

1 Jalapeño, seeded and diced (or to taste)

Dash of Cumin

White Pepper to taste

Himalayan Salt or Transformational Salt to taste

2 Avocados, cubed

3 Cucumbers, seeded and cubed

2 Stalks Celery, finely chopped (optional)

1 Bunch Fresh Cilantro, chopped

Handful Fresh Mint or Basil, chopped

3 Tablespoons Fresh Lime Juice

 

Blend tomatoes, olive oil, jalapeño, and spices. Mix in avocados, cucumbers, celery, mint/basil, and cilantro. Chill. Add lime juice before serving.
