Unfried Stir-Fry-Phase 1

Meet your daily intake of vegetables in this very enjoyable Raw Unfried Stir-Fry!

Marinated in a delicious easy-to-make marinade – these vegetables are sure to be bursting with flavor!

Consuming the recommended amount of vegetables will help you to meet your fiber, vitamin and mineral requirements for the day while helping you keep your caloric consumption within the proper range for your weight and height. Vegetables are particularly good sources of vitamins A, C and E, folate, fiber and potassium.

Use vegetables such as zucchini, carrots, fennel bulb, snow peas, celery, etc. and serve with cauliflower-coconut rice (blog page 7) or zucchini pasta. Easy – Fun – Delish!

MARINADE:

Blend the following marinade ingredients in a blender.

  • 1 C. sundried tomatoes, with ½ C. soak water (save the water after soaking the sundried tomatoes for 1/2 hour)
  • ½ tsp. turmeric
  • 1 tsp. cumin
  • ½ tsp. paprika
  • ¼ tsp. smoked paprika
  • 2 pinches hing
  • 1 ½ Tbsp.. chickpea miso
  • Pinch of fennel
  • 5 Tbsp. lemon juice
  • 2 Tbsp. ginger juice
  • 2 Tbsp. olive oil or sesame oil
  • 1/8 tsp. pepper flakes

 

VEGETABLES:

Marinate 8 to 12 cups of mixed vegetables overnight (zucchini, carrots, fennel bulb, snow peas, celery, etc.). Serve over cauliflower-coconut rice or zucchini noodles.
