Spicy Southwestern Jerky- Phase 1

Jerky is one of those things that if you love it, you’re always looking for that next chewy, spicy, piece of heaven that experience with a great jerky. Now you have our craveworthy jerky that is not only satisfying but good for you too. Make a few bags for yourself or share them with your family and friends. Perfect for those moments when the only snack that will do is a mouthwatering piece of jerky. Guiltless pleasure at it’s best!

4 red bell peppers
2 eggplants
1 medium butternut squash
10 zucchini

1/2 C. olive oil
1/4 C. lemon juice
1 Tbsp. Celtic salt
1 1/2 Tbsp. chili spice powder
1 tsp. cayenne pepper
1 tsp. paprika

Blend marinade in high-powered blender until ingredients are thoroughly mixed. Peel and slice vegetables into 1/2″ thick strips. Massage liquid into veggies, ensuring that both sides of each vegetable are covered with liquid. Place into shallow, rectangular dish (a casserole dish works well) and cover with marinade. Store in the refrigerator for 24 hours to allow time for the flavor to soak in.
Dehydrate at 145ºF for 2–3 hours and then at 115ºF for 10 hours. (If using a conventional oven set to it’s lowest setting. Place the casserole dish in the oven. Check the burgers in 5 hours and if necessary add more time, looking for a crunchy outside and a moist inside. Conventional ovens dehydrate more quickly than dehydrators. Most ovens will cut dehydration time in half.) Enjoy!
