Zucchini Chips

Try these crunchy RAW zucchini chips for a great-tasting guilt- free snack!

Zucchini is a very low calorie vegetable with no saturated fats or cholesterol. Its peel is rich in antioxidants and a good source of dietary fiber. This vegetable is especially rich in vitamin A as well as being a good source of potassium, magnesium, manganese and vitamin C.

Our RAW Zucchini chips are super-easy to prepare and make a great substitute for store-bought potato chips.

Feel free to experiment using your favorite spices and oils. Try and be amazed!

 

Raw Zucchini Chips

  • 6 zucchinis
  • Seasoning of your choice (see below)

Slice the zucchinis with a mandolin. Place the zucchini vertically to get 1/8-inch thick round chips. Season with salt, pepper, vinegar, and olive oil and dehydrate at 115 on mesh trays until crispy. You can use any salad dressing for seasoning, too. When you place the zucchini chips on the trays, make sure they are not on top of each other because they will stick together as they dehydrate. (If using a convention oven, set at lowest temperature setting, place zucchini chips on baking sheets lined with parchment paper, place trays in oven, keep door slightly open, dehydrate until crispy.)
