Key Lime Pie-Phase 2

What is better than a zesty, creamy slice of key lime pie on a hot and sultry day? It’s cooling, refreshing and pure delight. Even more delightful? Our Key Lime Pie is raw, vegan and packed with nutrients. Joy and health in every bite!


Crust:

2 C. pecans, soaked
1/2 tsp. nutmeg
1/8 tsp. fresh ground black pepper
1/4 tsp. Celtic salt
1 tsp. vanilla extract

Process all ingredients in a food processor with the “S” blade until the mixture becomes sticky and forms a ball. Press into 9″ pie plate and chill while making the filling. 

Filling:

1/2 avocado
1/2 C. coconut water
2 C. young coconut pulp/meat
1/2 C. lime juice
1/2 Tbsp. Celtic salt
1/4 tsp. stevia
1 tsp. psyllium

In a blender, process all ingredients except psyllium until smooth and creamy. Add psyllium and mix well. Pour filling into crust and chill for 2 hours or until set.  Slice or cut into squares and enjoy!
