Indian Wraps – Phase 1

Indian food has an undeniable comfort factor. It is soothing, it is warming, it is aromatic, it is textured and nuanced and it’s just plain delicious. These wraps are certainly a fantastic way to get the comfort of your favorite Indian food while being all raw, all vegan and all great for your Body, Mind and Spirit. These wraps are all heart and hearty. Indulge, enjoy, savor and smile. What more could we ever ask for when it comes to life and the food we eat?

 

CAULIFLOWER PATE:

Step 1-Make Tahini (4 cups of sesame seeds with ¼ cup olive oil or sesame oil and then blend in blender until smooth)

Blend:   

1 small avocado or use 2 Tbsp. of sesame oil       

¼ C. lemon juice                                                 

2 C. tahini       

 ¼ C. chickpea miso        

1 Tbsp. curry powder

¼ C. ginger juice

1/8 tsp. cayenne      

1/8 tsp. Himalayan Salt

1 bunch cilantro        

1 bunch mint

Place all ingredients in blender and blend until smooth.

Stir in:

2 C. vegetables of your choice, chopped into small chunks

5 C. Cauliflower Rice (see Basic Recipe page)

 

COCONUT SAUCE: (x2 for 1 recipe)

Blend in blender until smooth:

1 C. coconut flakes

1/2 C. filtered water

¼ C. coconut Oil                                                  

8 drops of Stevia

½ tsp. Himalayan Salt

 

De-stem 10 collard leaves or Lettuce Leaves or make cilantro wrap (see recipe below). Place one scoop of pate in each collard leaf (or lettuce leaves) and roll. Drizzle wrap with coconut sauce and top with sesame seeds.

 

CILANTRO WRAP (MAKES 12 WRAPS) 125 Degrees for 2-3 hrs then flip then leave 1 hour more. The following recipe makes one full blender.

 

Blend first:

1 C. seed milk

2 Zucchini, finely chopped

3/4 Tbsp. fennel seeds

3/4 tsp. turmeric

2 tsp. Himalayan salt

Then add:

2 bunches cilantro

while blender is running add ¼ cup coconut oil

 

Transfer to bowl:

Add 4 C nut pulp & ½ cup ground Chia

Spread evenly on dehydrator tray, 125 Degrees for 2-3 hrs then flip then leave 1 hour more. (If using conventional oven, place mixture on a baking tray lined with parchment paper, place in oven heated at lowest temperature, leave oven door slightly open, if you have an oven fan please use it, check after 1.5 hr. then flip and leave in for another 1/2 hr. Remember when using a conventional oven that it dehydrates more quickly than a dehydrator. Dehydration times are often cut in half when using a conventional oven.)
