A rainbow of colors to accent the phenomenal flavors in this subtly complex recipe for this not-so-traditional take on Nori Rolls. A joy to look at and an even greater joy to eat!
Ingredients:
- 4 raw nori sheets
- 4 C. sunflower seeds, soaked
- 3 carrots, shredded
- 2 zucchini, shredded
- 1 beet, shredded
- 1/2 cabbage, thinly sliced
- 2 Tbsp. lemon juice
- 2 Tbsp. miso
- Pickled ginger, cut into thin strips
- 1 avocado, sliced
- 1 tomato, chopped
- 2 cups sunflower sprouts
- Hummus, to make ‘Dummus’ (a mix dulse mixed with hummus), 3 Tbs per nori sheet
Directions:
Blend sunflower seeds and lemon juice in a food processor until you have a very thick paste, stopping the food processor periodically to scrape the sides. Spread approximately 1/2 cup of sunflower paste onto the rough side of a raw nori sheet. Spread hummus next. Cover half of the nori and fill with sliced vegetables, avocado, tomato and sprouts. Smear a small amount of miso on the nori. Roll up tightly and seal the nori roll with miso (or place a little water on fingertips, apply along the edge, roll tightly and seal).
