Cinnamon Rolls

Ingredients

Dough:

1/2 C almond flour

1 C powdered flax seeds 

1 C fresh young coconut pulp

1 tsp Vanilla extract

1 C fresh young coconut water

Blend ingredients in food processor with the “S” blade, adding coconut water until achieving the consistency of dough. Sprinkle an additional 1/2 cup powdered flax seeds on a cutting board. Press dough out by hand into a square.

 

Filling:

1 C walnuts

1 C coconut pulp

1 Tbsp cinnamon

1 tsp nutmeg or 3 drops nutmeg oil

13 drops Stevia clear

Blend ingredients in food processor with the “S” blade, or for extra creaminess blend in a high-power blender. Spread the cream completely over the dough. If you are on Phase II, you may wish to sprinkle finely chopped strawberries or goji berries on top of cream layer. Roll dough and cut into 1 inch pieces. Dehydrate at 100 degrees for 5 hours.
