Cauliflower-Coconut ‘Rice’- Phase 1

This delightful ‘rice’ is an excellent compliment to our Unfried Stir-Fry and would also be gently flavorful in many of our soups. It’s a simple go-to when you want ‘rice’ with a meal and ours is raw and vegan. Simply the best!

Cauliflower – the World’s Healthiest food?

Cauliflower is an excellent source of vitamin C, vitamin K, vitamin B6, pantothenic acid, and folate. It is also a good source of biotin, dietary fiber, antioxidants, magnesium, manganese and phosphorus. Eat to support your crown chakra: the crown chakra is white, and the associated phytonutrients are the allyl sulfides and quercetin. These are found in chives, leeks, scallions, garlic, onions, apples, cauliflower, and radishes.

RECIPE

  • 5 C. cauliflower
  • 1 C. coconut flakes
  • 3 Tbsp. sesame oil
  • ¾ tsp. salt

 

Chop ingredients in a food processor using the S blade until it resembles the texture of rice. Serve right away or chill and serve.
