These wonderful small seeds are loaded with nutrition! They are a great source of healthy omega-3 fatty acids – with nearly five grams in a one-ounce serving. Chia seeds are also rich in protein, manganese, magnesium, phosphorus and calcium. In fact, a serving of chia seeds has 18 per cent of the recommended daily intake for calcium – supporting our bone and oral health.
Berry Delicious Chia Pudding
- 1/4 C. chia seeds
- 2 C. of nut milk
- Pinch of Himalayan Salt
- Handful of Strawberries, blueberries or fruit of choice (optional – not Phase 1)
- 1 Tbs Yacon Syrup (not Phase 1)
Mix the milk, chia seeds, syrup, and salt in a bowl and let it set in the refrigerator for 45 minutes (can be made the night before). While the milk is absorbing into the chia seeds, stir twice to break apart the clumps that may occur. Add more or less milk depending on the consistency you desire. After 45 minutes, stir and add your berries.
